I was at dinner with a girl friend raving about my fave new Sweet Potato recipe when I realized, OMG this is TOO GOOD to not share! It’s so simple too!
1. Bake sweet potato for 45-60 min at 400 degrees.
2. Cook quinoa according to directions then season with cumin, salt and lime juice.
3. Top baked sweet potato w/ shredded chicken, seasoned quinoa, onions and jalapeños.
4. Top with cilantro avocado sauce!
Sauce directions: blend 1 cup fresh chopped cilantro, 1 avocado, 7tbsp lime juice, 1tbsp olive oil, cumin and salt in blender!
