Guilt-Free Blondes

Gluten Free, Vegan Blondies

And no I'm not talking about yours truly! ;) ;) I'm not gluten free or vegan normally, but I've been on a cleanse and needed something to cure a sweet tooth that met the requirements of said cleanse. And sure enough, I've had this recipe saved for MONTHS and this was the PERFECT opportunity to try it!

  • 1 can (15 oz) garbanzo beans, rinsed and drained
  • 1/2 cup peanut butter or other nut butter
  • 1/3 cup pure maple syrup or honey
  • 2 teaspoons vanilla
  • 1/2 tsp salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/3 cup vegan chocolate chips or other
     

Instructions:

In a food processor, add all ingredients except chocolate chips and process until batter is smooth. Fold in chocolate chips.

Grease 8×8 pan with coconut oil and spread batter, sprinkling with 2 tablespoons of chocolate chips on top.

Bake 350 for 20 min, although it takes mine longer than this to cook, so just cook until toothpick comes out clean and edges are brown. But don't over cook.

Slice into squares and serve your healthy Blondies!
