Salmon & Goat Cheese Scramble

Love this one because it's soo easy and delicious! Not to mention it's very gourmet in flavor and presentation if you're cooking for friends.

1. 2 eggs

2. 8 asparagus spears, chopped

I use about 1 spear per egg in the scramble and eat the rest on the side.

3. 1 ounce smoked salmon

4. 1-2 tbsp of fresh goat cheese

5. Pepper to taste

TIP: Use lemon juice to coat the pan instead of oil - the flavor compliments the salmon and it's healthier! WIN-WIN!
