Tara's Pseudo Taco Lunch

This is my FAVORITE lunch to pack for work. It's beyond filling and is a healthy twist one of my favorite food groups: tacos.

1. 1 whole wheat tortilla

2. 4oz ground beef turkey or chicken meat

  • I typically cook a full pound of ground turkey with lemon juice, onions and minced garlic (no oil) - then portion it out into four containers.
  • BUY EXTRA LEAN- Make sure to read the label, 

    if you're not careful with ground meat it can have up to 20g of fat in ONE serving! Even turkey!

3. 1 cup fresh spinach

4. 1/2 hass avocado or homemade guacamole

  • If I use guacamole I always make it fresh with hass avocados, pico de gallo, lime juice, garlic and pepper.
  • If you're making the guacamole ahead of time, make the same day and use extra lime or lemon juice to keep it from turning brown. I've also heard leaving the pitt in guac helps, but I've never had luck with it, feel free to comment if that works for you. OR let me know your other recommendations! :)

5. 1/2 cup pico de gallo or salsa

  • I sometimes make this myself, but you can also find fresh pico de gallo and salsa at the store - just try to find some without added salt. If you're not careful it can end up being the NUMBER 1 ingredient. No good. :)
  • I realize the photo shown does not have pico de gallo or salsa, sometimes I make do with what I have. However, I do highly recommend adding salsa for a little extra spice!
