OH EM GEE!! Cauliflower mash = sooooo YUMMMMMM!
I had no idea! It's the best substitute for mashed potatoes. I can't believe I didn't try this sooner!
Ingredients:
- 1 medium cauliflower head
- 2 tbsp greek yogurt
- 1 garlic clove
- 1/4 Parmesan cheese
- black ground pepper to taste
Directions:
Steam the cauliflower for 10 minutes, then blend w/ 2 tbsp greek yogurt, a sautéed garlic clove, 1/4 C Parmesan & pepper. And VOILA!
If you didn't know, now you know! Just doooo it! So simple, but soooo good!
