Grilled Sweet Potatoes

For anyone who loves Sweet Potato fries but doesn't love the calories or salt, THIS RECIPE IS FOR YOU! The texture isn't the same as the fries, but the flavor is! Whenever I make these, we end up eating them for dessert because they take longer to grill and they taste like they SHOULD BE DESSERT.

INGREDIENTS:

  • 2-3 sweet potatoes
  • 1 tbsp olive oil
  • salt and pepper to taste

1. Scrub and clean the sweet potatoes leaving the skin on

2. Slice the potatoes into small rings, making sure to slice across the potato not along it! Again keep the skin on the potatoes :)

3. Wrap the potatoes in a tin foil bowl, drizzling 1 tbsp of olive oil and salt/pepper to taste

4. Seal the tin foil bag around the potato pieces and put on the BBQ or in the oven on Broil

5. Cook AT LEAST 25-30 minutes or until potatoes are soft - note these may take longer to cook than your other grill items. I recommend starting these about 20-25 minutes BEFORE your steaks.

6. Eat and ENJOY! DEVOUR!

Note: If you want to enjoy your sweet potatoes with your meal, start cooking them at least 20 minutes before your meat. The longer they cook, the softer they will be. And the softer, the better!!
