Black Bean Tacos

For the filling:

  • 1/2 medium red bell pepper, cubed
  • 1/2 medium yellow bell pepper, cubed
  • 1/2 red onion diced
  • 15 oz can of organic black beans rinsed & drained
  • 2 cloves garlic minced
  • fresh cilantro chopped
  • chili powder
  • 3/4 teaspoon cumin
  • lime juice
  • teaspoon sea salt
  • black pepper

  • 1 cup plain Greek yogurt
  • Juice from 1/2 of 1 lime
  • 1 teaspoon fresh cilantro chopped
  • Dash of sea salt
  • Dash of black pepper
  • Dash of chili powder
  • Dash of paprika
  • Zest from 1/2 of a lime
