For those who are short on time, but still want to be healthy, I found this ingenious recipe that consisted of about 5 minutes of throwing things into the crock pot. No prep necessary! #winning
8 boneless, skinless chicken breasts
2 14oz cans diced tomatoes w/juice (I chose the Italian seasoned option)
1 small can tomato paste
1/2 red pasta sauce
1 diced onion
2 tbsp. Italian seasoning
1 tbsp. dried basil
1 30oz carton of coconut milk
2-3 heaping tbsp. minced garlic
Optional: for extra veggies and nutrition, I chopped some celery and carrots I had in the fridge and threw that in too.
Cook on low heat for 9 hours. Once done, use a fork to shred the chicken, then DEVOUR!
